Sweet Potato Soup

An uncomplicated but delicious recipe ...

Ingredients

Serves 4

1 onion
1 clove of garlic
1" cube of fresh ginger
All of the above chopped
1½ lb diced sweet potatoes (2 should be about right)
1 pint of vegetable stock
1 (400ml) tin of coconut milk (the size available in the village shop)
2 limes

Sweet potato soup

Method

Fry the onion, garlic and ginger until tender but not browned, then tip in the sweet potatoes and cook a few minutes more. Add the stock, cover and simmer for 20 minutes.

Allow the mix to cool a little, then liquidise with half of the coconut milk until smooth. Return to the pan and add the remaining coconut milk.

Before serving, add the zest and juice of the limes. Rather than stirring it in, Chris dribbled pearls of the lime juice on to each bowlful, which burst with flavour as they reached your tongue.

I am always looking out for uncomplicated recipes with ingredients I can buy here in the village, and this delicious soup, which was recently served to us by our friends living near Hay Tor, really fits the bill. Thanks to Chris for sharing the recipe!
