Raw Teddy Fry

Method

First fry the rashers of bacon and remove from pan and put to one side when cooked through.

Place the potato and onion slices into the pan and cover with water. Put a lid on the pan and simmer until the potatoes are soft and the water has become creamy. Add the stock powder and the bacon rashers and warm through

Michael Collins often cooks up the Raw Teddy Fry (have I spelt that correctly?) recipe handed down from Gran Burrow, mother of Mary and Gordon.

Apparently Gran Burrow loved to serve this with mushy peas. I guess that cabbage, sprouts or broccoli would be good with it too.

I offer no apologies for returning to last month’s potato theme, as several interesting ideas have made their way to the Whitsend kitchen since then and it’s quite clear we do all love our spuds! Soon after reading Michael Collins’ traditional recipe, Maggie Stanbury forwarded her father’s preference for eating Raw Teddy Fry with separate bacon slices and a fried egg. I wonder whether there are other variations around the village – do let me know!
