Ingredients
1 large bunch of radish leaves
1 large onion – roughly chopped
2 potatoes – cut into pieces
1 litre water (I might be tempted to add vegetable stock)
1 or 2 tbsp olive oil
Method
Another lovely surprise from Anne’s kitchen recently, was her radish leaves soup. I have cooked beetroot leaves from my garden before now, but had no idea that radish leaves could be used, let alone be so delicious. Here is the happily oh-so-simple method that Anne uses. My quantities here are rather arbitrary and yours will be decided by what leaves you have available, I guess. We have no radishes in the garden plot this year, so I haven’t been able to try it out yet.
I did not watch the cooking process, but would suggest you heat the oil in your pan, add the onions then the leaves and potatoes and cook them gently for 5 minutes or so, before adding the water. I would think that it might need to simmer away for 20 to 30 minutes, before you blitz it all with the blender. Serve with a dollop of cream or plain yoghurt in each bowl.
