Ingredients

Serves 4

1 tbspn freshly made ground coffee
1 ½ tbspns drinking chocolate
½ tbspn golden syrup
150ml double cream

Mocha Pot

Method

Mix together the coffee with the drinking chocolate and syrup until smooth. Leave to cool for 5 minutes.

Whisk the cream in a bowl until it forms soft peaks. Carefully fold the coffee mixture into the cream. Spoon into espresso cups or small glasses and chill in the fridge.

May be it’s after scoffing those Easter eggs at the beginning of the month, or perhaps it’s because of the wonderful summery weather we’ve enjoyed since then, but whatever the reason, activities have become distinctly sweeter in the Whitsend kitchen recently. Just as I was on the search for something sweet, delicious and easy to prepare, a superb idea came through on line from Irene Sutton. Her Mocha Pot takes all of 12 minutes to prepare, followed by a couple of hours chilling time in the fridge, and it is truly delicious.
