Easy Ice Cream

Recipe for Ice Cream using mincemeat, custard and double cream ...

Ingredients

1 jar of mincemeat
1 tin of custard (of course, you might make your own)
1 10 fl oz pot of double cream

Mincemeat Ice Cream

Method

Whisk the cream until thick and then fold the custard into the cream. Carefully fold the mincemeat into the mixture, trying not to stir too much. Scoop the mixture into a freezer box and put into the freezer for about an hour. Remove from the freezer and gently mix the frozen sides of the mixture into the middle.

Return the box to the freezer for another hour or so, and then repeat the process. Repeat once more after another hour, to improve the texture of the ice cream. Now simply leave your dessert in the freezer until you need it.

The above amount will make 4 to 6 portions, unless you want a mountain of the stuff each! I find it a good idea to bring the ice cream out of the freezer well before you need to use it, to let it soften enough to making serving easier.

I have made this ice cream before now to eat over Christmas – it slips down easily, when you feel really too full already! This time, it has become my big freeze dessert.
