Method
My English friend Shirley is just amazing at catering for large numbers, regularly producing meals for between 60 and 80 people in the French jazz café she runs with her partner. We had a taster of her fruit crumble dessert on our visit there. It’s a bit different from the traditional pudding, and even easier!
She covers the bottom of the dish with slices of banana, over which she puts whatever fruit she chooses; a mix of summer fruits now in season would be great, I think. For the topping, Shirley makes a mix of crumbled ginger (or other) biscuits with a little sugar and some melted butter. She then pops it all into the oven for ten minutes or so, and voilà!
