Dauphinoise Potatoes

Ingredients

Medium Oven for 1¼ hours

Sliced potatoes
Double cream
Salt & pepper
Grated cheese

 

Dauphinoise Potatoes

Method

Kate says she puts sliced potatoes in a dish, adds salt and pepper and pours over a lot of double cream – the more the better!

She then bakes them in a moderate oven for 1¼ to 1½ hours, adding a layer of grated cheese towards the end of the cooking time (otherwise the cheese can burn).

Kate Collins’ Dauphinoise Potatoes are reputed to be amazing, so I did venture to ask her secret.
