Banana Cake

Method

Sift the flour and soda into a bowl. Blend together all other ingredients and add the mixture to the bowl. Mix briefly until everything combined. Bake in a greased 7” square tin for approx 25 minutes at 375°

Cool the cake on a wire rack and serve it topped with Banana Cream.

For this you need: a regular pot of double cream, I ripe banana and 1tbsp icing sugar. Just whip the cream, mash the banana and mix all three ingredients together.  

A favourite standby in the Trewhitless household is this banana cake recipe. It’s a great way of using up overripe bananas, quick and easy to make, fail-safe, and because it uses fruit, somehow feels healthy! Top it with banana cream, and it becomes dreamy.
