Anne's Flan

Method

Our dear French friend, Anne, whose name has appeared on these pages before, (she is all I aspire to be in the kitchen, calm, organized, efficient…) recently made a delicious flan for us. Now that word in a French dictionary translates as “custard tart”, so don’t expect what we mean with the English word “flan”. Made in a shallow circular dish, this is a sweet cheesecake-like dessert, which Anne served with fruit freshly picked from the garden and her special cream. It is really very quick to make and a confirmed success!

Mix together the flour, fromage frais, eggs, salt and sugar and whisk until smooth. Gradually add the milk until well blended.

Butter the dish and pour in the mixture. You can place a few fruit pieces into the mixture at this stage, say 5 or 6 raspberries or strawberries.

When ready, it should be browned around the edges and it will sink as it begins to cool.

The little amount that was left by the ever-hungry Trewhitless family, tasted great the following day, after a night in the fridge.
